<p>Join Ben as he demonstrates how to set up and dial-in the <a href="https://clivecoffee.com/products/olympus-75e-high-speed-espresso-grinder" rel="noopener" target="_blank">Eureka Zenith 75E Espresso Grinder</a>.&#xA0;</p><p><span class="fr-video fr-deletable fr-rv fr-fvc fr-dvb fr-draggable" contenteditable="false" draggable="true"><iframe width="100%" src="https://www.youtube.com/embed/cmeGGQwJFlE?&amp;wmode=opaque&amp;rel=0" frameborder="0" allowfullscreen class="fr-draggable"></iframe></span></p><h3 id="step-one-out-of-the-box-and-onto-the-counter"><br>Step one: Out of the box and onto the counter</h3><ul><li>Remove the grinder from its box and place it on a solid level surface.</li><li>Inspect the grinder for any damage, if you notice any contact us immediately</li><li>Insert the hopper and tighten the hopper screw to hold it in place.</li><li>Plug the grinder in and turn it on</li></ul><h3 id="step-two-feeling-the-coffee">Step two: Feeling the coffee</h3><ul><li>Put some beans in the hopper and grind them into your hand</li><li>Feel the grounds. For espresso, they should feel similar to table salt. Not as fine as powdered sugar, and not as coarse as sand</li><li>If too fine, adjust coarser. Too Coarse, adjust finer.</li></ul><h3 id="step-three-nailing-the-dose">Step three: Nailing the dose</h3><ul><li>Now that the grind is in the ballpark, it&#x2019;s time to start pulling shots</li><li>First, grab a scale and tare the weight of the portafilter</li><li>Now use the portafilter to press and hold the grind button until it begins grinding. Holding the button initiates manual grinding mode, so simply release the button when the portafilter basket is full.</li><li>Now weigh the portafilter. Add or remove grounds as necessary to get to 18g.</li></ul><h3 id="step-four-adjustments---drop-time">Step four: Adjustments - drop time</h3><ul><li>Now you can compress the coffee with your tamper. Remember, tamping pressure is less important than making sure your tamp is level.</li><li>Insert your portafilter and start the shot. We&#x2019;re going to be watching for the time of the first drops of espresso.</li><li>We&#x2019;re looking for those first drops of espresso to fall between 6 and 10 seconds. If they fall outside the window, you&#x2019;ll have to adjust the grind setting: under six seconds will be thin and sour; over 10 seconds will be bitter.</li><li>Make small adjustments. This will be easier than making big changes and overcorrecting.</li></ul><h3 id="step-five-total-shot-time"><em>Step five: Total shot time&#xA0;</em></h3><ul><li>Grind a fresh full dose, tamp, and pull your shot.</li><li>This time we&#x2019;ll be looking at the full shot time</li><li>We&#x2019;ll be looking for a target output of: 1.5oz (or 30g) espresso in 25 - 30 seconds.</li><li>If it falls under 25 seconds, adjust your grind finer. If it falls over 30 seconds, adjust coarser.</li></ul><h3 id="step-6-time-dosing">Step 6: Time dosing</h3><ul><li>Now that we have our grind dialed, we can set up the grind timer for consistent and repeatable dosing.</li><li>With the hopper filled set the grind time to 5.5 seconds. This is generally how long it will take to get an 18 to 20-gram dose.</li><li>Place your portafilter in the holder and press play and wait until the grinder stops.</li><li>Weigh the portafilter again. If the dose is too small, increase timed setting. The grinder is infinitely adjustable, with the numbers serving merely as reference points. Turning the dial clockwise adjusts the grind setting finer and turning counter-clockwise adjusts the grind setting coarser. Make small adjustments as this mechanism is fairly sensitive.</p><h3 id="timed-dosing">Timed Dosing</h3><p>The Eureka Olympus has two programmable timed dosing buttons labeled by one and two cup icons. To adjust the setting of either of these settings first press the dose button you&apos;d like to edit. Then simply use the + and - buttons to increase or decrease the time displayed on the screen.</p><p>To use the grinders manual grinding mode, simply press and hold the grind button. The grinder will activate after about 1 second. <p><strong>Tools Needed:</strong></p><ul><li>Phillips screwdriver</li><li>Compressed air/keyboard cleaner/vacuum</li><li>Small brush/implement to loosen up stubborn grounds</li></ul><p>1. The recommended first step with a jam on any grinder is to go a rotation on the adjustment knob towards coarse and try and run the grinder. This oftentimes will allow the grinder to push through the jam and resume normal function. If that does not solve the issue and the grinder is still jammed, continue on to the next steps to open up the burr chamber and clean it out.</p><p>2. Unplug the grinder and remove any beans from the hopper/grinder throat that you can grab.</p><p>3. Remove the 3 large screws holding the top burr in place. A vacuum makes quick work of loose grounds, however, if that isn&apos;t available the grinders can be carefully turned upside down or blown out with compressed air/keyboard cleaner (this can be messy - be careful!).
