For espresso, they should feel similar to table salt. Not as fine as powdered sugar, and not as coarse as sand</li><li>If too fine, adjust coarser. Too Coarse, adjust finer.</li><li>The espresso setting is usually between 5 and 9 and varies based on coffee and atmospheric conditions</li></ul><h3 id="step-three-nailing-the-dose">Step three: Nailing the dose</h3><ul><li>Now that the grind is in the ballpark, it&#x2019;s time to start pulling shots</li><li>First, grab a scale and tare the weight of the portafilter</li><li>It&#x2019;s worth noting that the Sette 270 is a single dosing powerhouse. It&#x2019;s conical burrs and vertical grind path make for almost no grind retention. If you&#x2019;re only making a couple cups a day, single dosing is ideal for keeping your coffee fresh. If you plan to single dose, simply weigh out your beans ahead of time and grind them through. If not, now would be the time to fill your hopper.</li><li>With the portafilter in the portafilter holder, press the 3 button which has a default 30-second setting. Then press the play/pause button to start grinding. Press it again to stop when the portafilter is nearly full.</li><li>Now weigh the portafilter. Add or remove grounds as necessary to get to 18g.</li></ul><h3 id="step-four-adjustments---drop-time"><em>&#xA0;Step four: Adjustments - drop time</em></h3><ul><li>Now you can compress the coffee with your tamper. Remember, tamping pressure is less important than making sure your tamp is level.</li><li>Insert your portafilter and start the shot. We&#x2019;re going to be watching for the time of the first drops of espresso.</li><li>We&#x2019;re looking for those first drops of espresso to fall between 6 and 10 seconds. If they fall outside the window, you&#x2019;ll have to adjust the grind setting: under six seconds will be thin and sour; over 10 seconds will be bitter.</li><li>Make small adjustments. This will be easier than making big changes and overcorrecting.</li></ul><h3 id="step-five-total-shot-time">Step five: Total shot time</h3><ul><li>Grind a fresh full dose, tamp, and pull your shot.</li><li>This time we&#x2019;ll be looking at the full shot time</li><li>We&#x2019;ll be looking for a target output of: 1.5oz / 30g espresso in 25 - 30 seconds.</li><li>If it falls under 25 seconds, adjust your grind finer. If it falls over 30 seconds, adjust coarser.</li></ul><h3 id="step-6-time-dosing">Step 6: Time dosing</h3><ul><li>Now that we have our grind dialed, we can set up the grind timer for consistent and repeatable dosing.</li><li>With the hopper filled, press the 1 button and use the arrow buttons to adjust the time to 7 seconds.</li><li>Place your portafilter in the holder and press play and wait until the grinder stops.</li><li>Weigh the portafilter again. If the dose is too small, increase timed setting. To adjust one of these settings first press the corresponding button and then use the grind time adjustment buttons (21) to increase or decrease the timer. <h3 id="im-having-problems-getting-the-lower-burr-reinstalled"><strong>I&#x2019;m having problems getting the lower burr reinstalled</strong></h3><p>If, after removing the lower burr/adjustment assembly, you are unable to reinstall it &#x2013; its as if the parts are not inserting far enough to seat properly, it probably means that there is an accumulation of coffee grounds preventing reinstallation of the lower burr/adjustment assembly.</p><p>If you notice your micro adjustment ring moving toward the coarse direction you can correct this by simply tightening the three screws on the bottom of the adjusting ring. To do this, remove the adjusting ring and burr and turn it over to see the screws, tighten the screws up a little (maybe a 1/16 of a turn) and re-install the adjustment ring/burr and you should be fine. Do not over tighten the screws or you risk stripping the threads.</p><p>If the issue persists it may be because there is insufficient friction between the micro adjust collar and adjustment assembly. This can be solved by inserting some felt shims. See this <a href="https://drive.google.com/file/d/0Byh-DKBg2XlwMVZoWUZXT3FJT2s/view">guide</a> for instructions. The felt may be purchased at your local hardware store and cut to size or you can email <a href="mailto:Support@Baratza.com">Support@Baratza.com</a> with your shipping address and they will send them to you.</p><figure class="hs-align-center"><img alt="Baratza Sette 270: FAQs" class="hs-image-align-none fr-fic fr-dii" src="https://cdn2.hubspot.net/hubfs/4309359/IMG_0301-1.jpg"></figure><p>Yes, we have re-designed the arms and the portafilter hook, since the initial tester Settes, to accommodate portafilters from sizes 49mm to 58mm. The rubber sleeves on the arms are fully rotational allowing you the option to position them in a way that best suits the tool/brew-method you are using &#x2013; portafilter, grounds bin, Hario, Kalita etc. There is a small tab on the end of the sleeve that is used as the stopping point for most portafilters. However some, like the La Marzocco we use in many of our images, sit better when the stop tab is turned down. If you are working with one of the earlier Sette versions and would like a newer set of arms, please email Support@Baratza.com and they will send them to you.</p><h3 id="is-it-possible-to-calibrate-the-sette"><strong>Is it possible to calibrate the Sette?</strong></h3><p>Yes it is possible to calibrate the grinder finer for espresso with the addition of some shims, which are included with your grinder. If you did not receive a package with shims please email Support@Baratza.com. They will send you a pack with instructions for installation and usage. The grinders come with an all purpose burr which has generally been very well received. As a grinder company we have learned that coffee professionals and enthusiasts all have very different taste expectations and approaches for manually brewing coffee. As a result we are working on a second burr that offers a different grind profile in the coarser range. We have been sending these out for testing and the feedback has been positive. At this time we we do not have any more of these coarse burrs available.</p><h3 id="what-kind-of-plastic-do-you-use-in-the-bin"><strong>What kind of plastic do you use in the bin?</strong></h3><p>As a result, some professionals are tempted to use it in high volume commercial situations. However, please know that overuse in a commercial setting could cause slowdowns or stoppage, which may impede your operations and service.<br>Here is a general overview of the duty cycle of the Sette Series:<br>Espresso (Settings 3-9) it will take about 6 seconds to grind a dose of espresso, then the grinder should rest for 60 seconds. This is about what you could do if making back-to-back shots on a one-group machine.<br>Brew (Setting 15-30) it will take 5 to 30 seconds to grind up to 150 grams of coffee, then the grinder should rest for 60 seconds.<br>Remember, a maximum of 150 grams at one time, with a 1 minute off before grinding again.<br>The duty cycles described above will work great for home brewing. <p>Inside the box, you will find your <a href="http://www.baratza.com/wp-content/uploads/2016/01/QSG-sette270-112016.pdf" target="_blank">Quick Start Guide</a> and online you can find the <a href="http://www.baratza.com/wp-content/uploads/2016/01/manual-sette270-en.pdf">User Manual</a>. First, remove the grinder, in the burrs you will find a silica packet which is included to keep the burrs from rusting, discard that. Unwrap your power cord, grounds bin, hopper, and grounds catcher.</p><p>To install the hopper for the first time, ensure the on/off valve key is pointing toward the rear of the machine. Set the hopper into place and lock it clockwise into position. The key will be pointing directly towards the rear of the machine.</p><p>Set the grounds catcher and bin into position. Plug the power cord into the back of the machine and plug the cord into the wall.</p><h3 id="grind-timers">Grind Timers</h3><p>The grinder has three factory presets for the timers: 10 seconds, 20 seconds, and 30 seconds. Select the preset you would like to program adjust the time with the Grind Time arrows on the right and press and hold the preset button until it flashes indicating your time setting has been saved.</p><p>Press the Play/Pause button to begin your grinder timed setting. You can pause the grind with the same button and press it once more to resume the rest of the time setting. Pressing the Stop button will reset the remaining time.</p><h3 id="grind-adjustments">Grind Adjustments</h3><p>The rings below the burrs on the grinder will adjust your grind setting, you have a clicking macro on the top ring and smooth micro grind adjustment on the bottom ring. It is recommended to run the motor whenever you are making a grind adjustment.</p><h3 id="removing-burrs-for-cleaning">Removing Burrs for Cleaning</h3><p>Rotate the clicking macro adjustment toward the course setting and continue going until the notch lines up with the blue arrow. The assembly will drop free from the grinder giving you access to cleaning the burrs.</p><p>To reassemble the burrs, rotate the black plastic ring on the assembly until the notches fall into place in the grinder, push the burrs up gently to slide them into place. Once it is flush align the blue dot and blue arrow, press up firmly and rotate the assembly back into place. The Sette will only run when the macro adjustment is in between the grind setting numbers.</p><h3 id="portafilter-and-drip">Portafilter and Drip</h3><p>The Sette can hold pour over drippers with the included arms. Press down firmly on the portafilter holder arm and swing it into place when using for espresso. Press the right arm firmly back into the grinder until you feel both arms swing. Move them until they lock into place in a down position.</p><h3 id="grind-recommendations">Grind Recommendations</h3><p>For a fine drip setting with a V60 or Kalita, set your grinder at #15. For espresso, we recommend a starting point of #5.
